Grilling is more than just cooking—it’s an art form that brings out the best flavors in food. I’ve been focussed on mastering the art of grilling for more than 20 years and I want to share some tips and tricks to help you become a grill master in your own backyard. Whether you’re a novice or seasoned griller, these techniques will take your barbecue game to the next level.

1. Choose the Right Cut of Meat

For great grilling results, start with quality meat. Choose cuts like ribeye, skirt steak, or flank steak for their rich flavor and tenderness. Marbling is key—look for well-marbled cuts that will stay juicy and flavorful on the grill.

2. Preheat Your Grill Properly

Before cooking, preheat your grill to the right temperature. For high-heat searing, aim for around 230-260°C. HOT! A properly preheated grill plate ensures a nice sear on the outside while keeping the inside juicy.

3. Season Generously

Season your meat liberally with salt and pepper before grilling. For added flavor, I like to use a dry rub or marinade that complements the cut of meat like the Chimichurri rub we use in the food truck. I can’t share the recipe with you though – it’s a family secret.

4. Use the Two-Zone Cooking Method

If you can, create two cooking zones on your grill: a direct heat zone and an indirect heat zone. Sear your meat over direct heat to develop a crust, then move it to the indirect heat zone to finish cooking without burning the exterior.

5. Let It Rest

After grilling, allow your meat to rest for a few minutes before slicing. This allows the juices to redistribute, resulting in a more tender and flavorful bite.

6. Master the Art of Searing

Achieve perfect grill marks by ensuring your grill grates are clean and well-oiled. Place the meat on the hot grill at a 45-degree angle and let it sear without moving for a few minutes before flipping.

7. Don’t Forget the Vegetables

Grilling isn’t just for meat! Grill vegetables like capsicum, zucchini, and corn alongside your main course. Toss them with olive oil, salt, and pepper for a delicious charred flavor.

8. Finish with Chimichurri Sauce

Drizzle your grilled meats with Chimichurri sauce just before serving. The bright, herby flavors of Chimichurri complement grilled dishes beautifully.

9. Clean and Maintain Your Grill

After grilling, clean your grill grates with a wire brush to remove residue and prevent sticking. Regularly clean and maintain your grill to prolong its lifespan and ensure optimal performance.
